Weekend Recap.....

I had another full weekend this final weekend of June. I can't believe that it's the end of June already! Here's what went down:

Friday: This was the only day I had "free" this week. I decided to run my errands that day. I went ahead and did my July budget before heading out. I went to Target to find a birthday present for Gabby's first birthday. I also hit up the library. Target and the Library....my happy places. I decided that I wanted to re-read Janet Oke's "Love Comes Softly" series. Luckily, I found 7/8 of the books at one library. I was only missing the 4th book. I just put in a request for it to be sent to my home library since surely I wouldn't be needing the 4th book that soon....right?
 I went to Sprouts to get my produce for the week. Then it was off to Kroger to get the rest of the groceries. I decided I'd treat myself to a Starbucks drink while grocery shopping. I ordered a tall non-fat chai latte. When they scanned my Kroger card they told me I had a free drink and did I want to use it? Why, yes I do. And, yes, I want that big size!
Don't mind if I do!

Mr. B and I went to get some frozen yogurt when he got off work. Then it was home for us. I ended up reading the first 2 books of my series.

Saturday: I knew that when I was half way through book 3 on Saturday morning, that I was going to need to find that 4th book. I have patience issues. I drove to another library to get the 4th book. As of right now, I'm half way through that book (probably going to finish it tonight after the Bachelorette). Since Mr. B and I planned a fondue date night, I decided it was time to see my girl, Bon, at Q Spa Nails for a manicure. I decided on a 4th of July themed mani.

Mr. B and I headed to Simply Fondue that night for our first time at a 4 course fondue dinner. 
It was fun getting dressed up for date night. We haven't done that in a long time.
Our first course was cheese fondue with veggies and bread for dipping. We got the fontina cheese fondue. While it was tasty, we thought there was a little too much white wine base for our liking. I felt that every bite I tasted the white wine more than the cheese. Regardless, we ate it all.

Next up, the salad course. For me, it was the Greek salad and the Caesar for Mr. B.

Next, the main meat course. We each got 3 choices of meat and received 3 pieces of each choice. We chose bacon wrapped sirloin, teriyaki sirloin, coconut crusted shrimp, herb crusted pork, garlic herb chicken, and beef sausage. It was served with 2 slices of yellow squash, zucchini, red potatoes, sweet potatoes, broccoli cheese bites, jalapeno cheddar bites, and cheese ravioli. We also got 4 mini portobello mushrooms for stuffing. It came with dipping sauces and batter if you wanted to batter fry the items.
This was fun for us to cook our own food. The experience was super fun. We ate everything on this plate. It was so good.

The final course was the chocolate fondue. Mr. B chose the chocolate caramel pecan fondue. There was marshmallows, rice crispy treats, brownies, cheesecake balls, cookie dough balls, cherries, pineapples, strawberries,  apples, and bananas for dipping. The waiter even gave us a chance to roast marshmallows before digging into the chocolate.

Sundance Square is our favorite date spot. From our dating days, to our proposal, to our married years....we've always loved this place. I can see many memories in our future made here.


Sunday: I went to church Sunday morning then came home for a quick meal before heading to my favorite art studio, Art in the Vine, to paint with my BFF, Christy.
We missed her sister, Misty, since she had to work. Boo!

I went back home for a snack and to pick up Mr. B for evening church services. We came back home for a relaxing evening on the couch.

Bonus for today!!!!! I had 3 really ripe avocados in my fridge that I've been meaning to make into guacamole. Today I finally got it done. I decided to call this "I bet this will taste good in there" Guacamole. Literally, that's what I was saying as I added different ingredients in with the mashed avocados. Let me tell you, this is some of the best Guac I've tasted (I'm not just saying that b/c I made it). I didn't measure anything out. I just put a dash of this and a splash of that in with the avocados. Here's what I put in it:
  • mashed avocados
  • about 4 oz of sour cream
  • 3-4 tablespoons of salsa
  • splash of lemon and lime juice
  • splash of Worcestershire sauce
  • dash of Parmesean cheese
  • dash of garlic salt
  • green onions
  • dash of Mrs. Dash's garlic herb seasoning


It was bomb for sure! I had to make myself put it away. It tasted good on garlic herb triscuits. I can't wait to put it on my chicken gouda burger!

In case anyone wants to try these delicious Chicken Crescent roll-ups I made, click here for the recipe. I used the whole 8 oz of cream cheese for mine. I cooked my chicken in the crock pot and topped it with Mrs. Dash's chicken seasoning and poured salsa and a bit of water over it.

Our Busy Week Recap

I don't normally do weekly recaps....mostly because they would be boring. However, this week was oddly busy. A few things were planned, some were not, and some just kind of sneaked up on me. The first 2 weeks of summer were filled with family. This was the first week back to just me and Mr. B. Or so I thought.....
Sunday was Father's Day. He had to work 8-4. I went to church with my sister, her fiance, and baby Jude. After church, I helped them pack up and they headed home. I had some lunch, a quick nap, and headed back to church for a VBS meeting. Mr. B met me at church for evening services. After services, we met his parents at Spring Creek BBQ for dinner. Then we headed to Wooly's Frozen Custard to meet up with Mr. B's sister and her family. We didn't get home till 9:00 that evening. We relaxed with some TV before heading off to bed.

Monday Mr. B was off and decided to do some yard work and things around the house. I went to visit friends for the day. Since it's summer and I'm home all day, Mr. B doesn't really get days to his self, so this was a good opportunity for him to have a little alone time with me being gone all day. I spent the day shopping and swimming with one of twin BFFs. When her sister got off work, we went to the gym for a little Cardio Dance Jam. I think I'm still feeling the effects of that class. This white girl has very little, if any, rhythm. She's already asking when I'm coming back! I'll get back to you on that:)
I headed home late that night and had some TV time with Mr. B before heading to bed.

Tuesday I thought would be a chill at home kind of day. Well, I woke up to a text from a friend from work asking if I wanted to go swim and shop. Since I had just woke up, I said no to the swimming but yes to the shopping. I did some blogging and grabbed a quick workout before she showed up to pick me up for shopping. It was fun shopping with her and her sweet little girl! Although, I'm pretty sure she may not want to take me along when clothes are involved since I think her daughter needs every outfit out there. I can't help it! Baby clothes are so stinking cute. I need a baby just so I can dress him/her. I did get home at a decent hour to make dinner. Here's what was on the menu:

  1. Cajun Crab Tilapia
  2. Roasted brussels sprouts with bacon (for me)
  3. roasted zucchini (for Mr. B since he is a negative of those brussels)
  4. fresh garden tomatoes (from the in-law's garden) with fresh mozzarella a Greek dressing
I tossed the brussels and the zucchini in the same Greek dressing I used for the tomatoes and mozzarella. I seasoned them with Mrs. Dash garlic and herb seasoning and Cajun seasoning. I added raw bacon to the brussels and shredded cheese to the zucchini. I prefer to add Parmesean to both, but I was out. I have to special order the Greek dressing from Gazebo Room. Thanks, Tiff, for getting me hooked on that stuff.

Wednesday Mr. B was off again. We decided to put our Six Flags/Hurricane Harbor season passes to use. We went to the water park for a few hours that afternoon. We love the season pass/membership deal. We pay $22/month (for both of us) for a combo pass. Parking is even included. We don't feel like we've wasted money if we only want to stay 2-3 hours. We just like to float the river and wave pool. We ride a few slides, but mostly stick to floating. We like to get there early before it gets too hot and too crowded. You know it's time to leave when you can't float without running into someone. Mr. B is more of a thrill seeker, so he likes to ride the slides that shoot him out into 12ft of water. Yeah, not me. I used to be like that. #oldagehascaughtuptome I prefer the Sea Wolf raft ride that we ride together. That's about as much thrill as I can take. Afterwards, we stopped at Sonic Happy hour for a drink (this may or may not be my 3rd day in a row to do this.....#addictedtopeachteafromsonic) If it's summer and I'm out and about between the hours of 2-4, I'm getting a peach tea from Sonic. We grabbed a quick selfie in the car after our long day in the sun.

We went straight home and took a nap! It was longer than we expected it to be. We ended up doing leftovers from the night before while I finally got to watch Monday's episode of the Bachelorette and discuss with my girls from work. I caught up on some reading, and we watched a little more TV before heading to bed.

Thursday was another busy, but fun day. I woke up and did a few things around the house before grabbing a quick workout. After my workout, I got cleaned up and read for a bit before heading to our little team get together at a friend's house. It was a great time with good food and conversation. I mean, of course there was good food. It is us after all.

It was a late night since I didn't end up getting home until 9. I finished my book....FINALLY! Then it was bedtime. The weekend looks to be somewhat eventful, so we shall save that for another post.

What's up Wednesday? June 2015 Edition

What we're eating this week?
I'm revisiting a recipe that I haven't made in a long time: Cajun Crab Tilapia. This recipe comes from my friend @lovelysgirl. You can check out her recipe here!
What I'm reminiscing about?
We just spent a week taking care of our 4 month old nephew. It was an experience that I'll never forget. It gave us a glimpse into parenthood. You can check out my reflection of the whole experience in my "My week as a mom" post.

What I'm loving?
Well, since my little sweetheart's return back home, we've been getting some super cute pics of him. I think I'll share those since I'm always loving pics of Captain Jude the Dude.




What we've been up to?
We went to visit with my family a couple of weeks ago when school let out. We spent a week in West Texas and New Mexico. I recap that post here. Then, we had Jude all last week. Since we took my parents out for lunch for a combined Mother's/Father's Day while we were in town, we wanted to do the same for Mr. B's parents this past Sunday. After Sunday evening church service, we took them to eat some BBQ. The line was out the door, but we waited anyway. It's always nice to share a meal with my in-laws (who, by the way, don't even feel like in-laws because they are that awesome). After dinner, we met up with Mr. B's sister and her family for frozen custard. Since we had to say goodbye to the baby that afternoon, I was consoled by the fact I got to see our 4 year old nephew and our niece that evening. Plus, ice cream makes everything better. I thought this week would slow down a bit and I'd spend some time at home reading and catching up on house projects.....nope! I've managed to stay busy just about every day. Oh well! There's always next week.
What I'm dreading?
Well, I finally got the roof fixed....we hope! Now we just have to get the interior ceiling fixed in the bathroom. I'm dreading the mess and the $300 I have to part with to make it happen. The joys of home ownership!
What I'm working on?
I just finished up my article for our church quarterly publication on the Fruit of the Spirit. I wrote on self-control. Of course, I slid back into my college essay writing days and waited until the last minute to write it. I mean, I know I was busy, but I ultimately had no idea how I was going to approach it. It took lots of back and forth Facebook messages with the preacher to determine Greek meanings for some words and many searches on my Bible App before I was comfortable with my position. It hasn't been published yet, but I posted it on my Forever Faithful blog. You can get an early preview here.
What I'm excited about?
I'm excited about tomorrow's get together with the girls at work. We've been doing this thing where we have a little get together at everyone's houses. I must find a time to host at my house!!! I just love how we love to spend time together....and of course eating!!! I'm also excited about taking another painting class at my favorite art studio, Art in the Vine, this Sunday afternoon with my BFF Christy. She begged me to come to her cardio dance jam class, so I did. Now I'm sore, but ready to tackle Zumba classes at the Y again....I think.
What I'm watching/reading?
It's summer, so it's Netflix binge time. Season 3 of Mako Mermaids came out....don't judge my adolescent tastes. I love mermaids. I still need to check out Gilmore Girls. I'm trying to finish the final book in the "Bloodlines" series (a spin-off of Vampire Academy) by Rochelle Mead. I have plans to re-read all the "Love Comes Softly" series by Janet Oke.
What I'm listening to?
I'm into Kacy Musgraves and Meagen Trainor these days. I like the old-school country feel of Kacy and the doo-op feel of Meagan.
What I'm wearing?
It's summer. I'm either in sweats, a maxi dress, or a swim suit. I don't do shorts. I may or  may not repeat outfits throughout the week.
What I'm doing this weekend?
There's no definite plans yet. I really would like to take Mr. B on a nice date. I'm thinking a Fondue restaurant and a movie and/or mini golf. I don't care for movies, but he's been asking to go to a movie for a while. He's been super awesome these past few weeks. I really want to treat him.
What I'm looking forward to next month?
Our 5 year wedding anniversary is July 17. We are going to Riviera Maya, Mexico and staying at the Hard Rock Hotel. It's an all-inclusive resort. I splurged and got us the upgraded room. Last summer's Dominican trip was fun, so we're excited to leave the country again to visit the Caribbean.
What else is new?
I've stayed surprisingly busy so far this summer. Yesterday I thought I would spend the day at home and read, watch some TV, do some work around the house, and get dinner on the table at a reasonable time. Nope. Got a text from a friend around 9am asking if I want to go shopping. Yep! I managed to squeeze in a quick workout before heading out with her and her sweet baby for an all day shopping affair. Oh, well! Maybe Friday I'll manage to stay home (except for errands) and get stuff done.
What we're doing for the 4th of July?
I don't know what we're doing on the actual 4th, but on the 3rd I'm going to a 1 year old birthday party. That evening we are going to a friend's house from church for a cookout and some fireworks. Maybe we'll hang out with Mr. B's parents that Saturday.

18. How are you and your husband the same? We prefer to stay at home most days and just relax together....even if that is just sitting on polar opposite sides of the couch with the TV on in the background while we're both on our iPads
19. How are you and your husband different? I'm such a planner and think long term when making most decisions. He struggles with making decisions on the spot and is more of a "go with the flow" kind of guy (yeah, that was a really detailed way of saying the same answer he gave to this question)
20. How do you know your husband loves you? Aside from the fact that he tells me several times throughout the day, I get a kiss every morning and every night....no matter what, he's always doing things for me even if I can do them myself....he's got a servant's heart.
21. What does your husband like most about you? My randomness and humor. I'm always making up random words, singing at random times (usually random words/lyrics), and just cracking jokes (often at his expense)
22. What is your husband's favorite place to go? He really prefers to stay at home, but he really enjoys guitar center.
23. How old was your husband when you were born? He was exactly 2 months old!

My Week as a "Mom"

This last week I had the opportunity to have my 4 month old nephew stay with us for the week. He lives 5 hours away, so we don't see him much. Naturally, I was thrilled at the chance to keep him for a week. "This will be so much fun!" Well, it was fun to some extent. However, it was more of an eye-opening experience.

It all started with what is usually a 4 1/2 hour non-stop ride for Mr. B and I to a 5 hour plus one stop ride with an on/off fussy baby. Having to listen to the poor baby cry for 30 miles was a bit difficult. When there's no place to pull over, you just have to deal. Next, I come home and I'm used to unloading the car and getting straight to unpacking so I can veg out in front of the TV or catch up on some reading. Nope! I've got to get the baby out of the car and change him and make sure I get him settled before I start unpacking. I didn't get unpacked until after  midnight that night, and we got home at 7. Of course, sweet baby was very fussy that night. "OK, I can do this!" became my mantra all week. Mr. B was so sweet and helpful throughout everything. Luckily for us, Jude (my nephew) slept through the night.

 Day 2 was a bit easier. I went to hang out with my friend from work, who is still kind of a new mom. We were going to have some pool time. We did this a couple of summers ago. This time, it was a drastically different experience. There was no lounging in the sun to work on our tans. There was no simple floating with easy conversation in the pool. It was more of a "is the baby getting too hot? Should we put more sunscreen on? Do you think they're allergic to this sunscreen? He/she is hungry. They want out." Not the most relaxing experience. But hey, at least we got to cool off a bit.

Day 3 wasn't too bad either. We went to story time at the library. Jude slept through the night again, so I wasn't overly exhausted. He would even take a nice long nap with me in the afternoons. I was getting some of my usual stuff done while he was asleep or playing. Mr. B was still tag-teaming with me when he was able. I was on my own while he was at work. That night, things took a bit of a turn.

Day 4 and Jude decides he wants to wake up at 4 to eat. Ok, Mr. B, you change the diaper and I'll make the bottle. Done. Thankfully, Jude goes back to sleep until 8 the next morning immediately after his bottle. I had plans to spend time with friends that day and was taking Jude with me. His parents had come to stay the night and I was busily trying to usher them out the door so I could leave. I also had to get myself together and make sure Jude was ready to go with all things I may/may not need throughout the day. He slept the whole hour-long drive. He did alright for the first few hours. He even let me enjoy a nice lunch out with the girls. When we got back, it was a different story. He was extremely fussy. It made getting things done very difficult. I constantly had to stop what I was doing (something I do not like to do when I'm very involved in something) to try to get him to calm down. He just wouldn't sleep. He did eventually crash on the drive back home. It was a bit of a challenge to get him to sleep that night, but it was done. Until 4am.....

Day 5 he was up again, but went to sleep until 8:30 after his bottle. It was a good day. Mr. B was off, so I had some help. We ran a few errands, and he did great. He even took a really long nap that afternoon. His parents came back that night. Jude went to sleep fairly easily. Again, he was up early. A little before 4 this time.

Day 6 he did not go back to sleep until after 5 am. We stayed at home most of the day. He went to story time with his parents that morning. He wasn't too thrilled about his early afternoon nap, but he eventually went down. He had a difficult night. This last night he stayed with his parents. Of course, he slept mostly through the night and didn't require a bottle at 4 am. He was even good at church the next morning.

Throughout this experience, I would ask Mr. B: "Are you sure you're ready for this?" He would always respond, "Yes, I know I can do this. It won't be easy, but we can do it." Several times throughout the week I would have to stop and ask myself, "Am I really ready for this? Can I really stop being so selfish with my time?" I mean, I really had to stop and think. I usually have 10 books read by now. I haven't even finished one book. I've usually watched several shows on Netflix....can't even get one started. I haven't started any of my home projects. Mr. B and I have always wanted children. We can close a couple of years ago to having not one, but two children! Looking back, I honestly don't know how I would've handled that. I guess I would like to think that while I have the personality type that thrives on routine and structure, I also thrive under pressure. I'm a problem solver. I get things done that need to be done. I've always been that way. So am I ready for a baby to be in my life on a permanent basis? Yeah, I really think so. It'll mean a lot of life changes and personal changes on my part, but the rewards will far outweigh what I'm having to "give up." I really feel Mr. B and I have finally reached that point in our marriage where we can withstand the challenges of a new addition. Thursday, one of my friends said you really have to have a strong marriage to have children. I agree. I don't know if we will ever be blessed with children. I'd like to think children are in our future at some point. All we can do is continue to pray and have faith in God. While we wait, we can continue to grow together to form that stronger bond that will make us even better parents to a little one some day.

Captain Jude's DFW Adventures: Days 6 & 7

Captain Jude the Dude here to share my final adventures in DFW. This baby-cation has come to an end. I kept it pretty low key these last two days. Mommy and daddy woke up and took me to story time at the library. I got to see my beautiful curly headed girl, Gabby, one last time. I had a lot of fun and was glad I got to hang out with my parents.

However, the experience was quite exhausting, so I crashed on the way home.
The struggle is so real!

Speaking of crashing, I have a new trick. I can now roll over to my belly. I think I might have already mentioned that. I now prefer a new sleeping position.

It was pretty much and eat, sleep, potty, and play at home kinda day. I sure am cute when I sleep.

I must have my "Jeff" when I sleep. We're best buds. Mom and dad took the longest nap ever, so I hung out with Lee Lee until they woke up. I had to get in one last snuggle with my Aunt Lee Lee before I went home.

I had a rough evening and was a little difficult at bedtime, but I managed to sleep. I got to stay with mom and dad last night. I thought it was time to give Aunt Lee Lee and Uncle C a good night's rest. I can't believe I forgot to tell Uncle C goodbye before I left! He was fun times. 

We woke up the next morning and went to church. I fell asleep in Lee Lee's arms for most of it. We came back home to pack up and hit the road. I had to get in a couple of more pics with my Aunt Lee Lee before I go. 


She was fun to hang out with this week. I can't wait till her and Uncle C make me a cousin. I'm still alive and well, so I think they'll do alright if they have their own tiny human. That tiny human better watch out if they have chunky cheeks though. Lee Lee really loves those! It's a long car ride back home. This will probably be how I spend most of the car ride (at least that's what mom and dad are hoping for).

Captain Jude's DFW Adventures: Day 5

Well, I've made it almost a whole week here with Aunt Lee Lee and Uncle Coop. I've had a pretty good time here. Although, it's been nice to have mom and dad here and I'm kinda missing granny and paw paw. This baby-cation is a bit exhausting. I had a pretty relaxing day even though I was up at 4am again. I was nice and went back to sleep after my bottle. We woke up around 8:30 and had our breakfast and play time. I got to play with Uncle Coop today since he was home.

I will get the hang of this sitting thing eventually! I've already discovered that I can roll to my tummy! I just haven't quite mastered the art of getting back on my back......

We got to get out of the house today. We went to visit nana and granddaddy (Uncle Coop's mom and dad). I like them. That granddaddy fellow is hilarious. And let's not even talk about how cuddly and sweet that nana lady is. I fell right asleep on her. Yeah, she's that good! When I woke up, I got my bottle and went to run around with Lee Lee and Uncle C. I guess it was their turn to eat now. I just sat in my seat and watched. Next, we went to the grocery store. I got to ride around all day in the cart.

By the end of the shopping adventures, this is what I looked like:

I guess you could say that I "shopped till I dropped!" But hey, Lee Lee and Uncle C got a nice long nap out of it. I woke up and got to Facetime with Granny. Then I had some TV time.

I got to hang out with my puppy, Cora. I think it's safe to say she misses mom and dad, too. 


Lee Lee's dog will be happy to see me go, I think, I may or may not have been stealing all the attention from him. I let him have some time with Lee Lee, too.

Mom and dad came home! They thought it would fun to dress me up in their sunglasses. Guys, I'm too cool for school!

I just can't with these shades! I'm such a naked baby stud:)

Mom and dad went to get some food, so I got to have bath time with Uncle C and Lee Lee.


Uncle C gave me my bedtime bottle before I crashed at 9:30.

Captain Jude's DFW Adventures: Days 3 & 4

Jude the Dude here. I'm combining 2 days worth of activities since day 3 was so boring. It rained all day long, so Lee Lee and I couldn't go anywhere. I was really hoping to go back to story time. I pretty much just did what babies do: eat, sleep, cry, potty. I had some fun time in my bouncer.


Lee Lee put on my shows: Curious George, Daniel Tiger, and Mickey Mouse.

Lee Lee and Uncle C took me to church. I was really good for them. I had a few extra admirers that night. What can I say? I'm adorable. The best part of my day was when mommy and daddy came! I've missed them. Mommy got to bathe me, feed me, and change me. 
I ended my night like always: bedtime bath, bottle, diaper change, and cuddle time with Lee Lee.

Day 4 was a completely different story. Let me just start off by saying, this day wasn't one of my finest. I was super cranky. It all started at 4am when I decided I needed to wake up and eat. I was nice enough to let Lee Lee and Uncle C go back to sleep after my bottle. We slept until 8:30. Pretty nice of me, right? I started off alright, not too cranky. I rode in the car nicely for Lee Lee and slept. I was even good when we arrived. She was hanging out with some friends. Imagine my surprise when I saw Gabriella (yes, my girl with the luscious curls) there! Boy, can that girl get around. I can't wait until I can move about like that. I'm still working on this whole "rolling over" thing. After the ladies had a little chat, we went for another car ride. I got to have lunch with the ladies at Market Street. I think it's pretty safe to say I had a good time being the only lil' dude in the bunch.

I was good on this trip, too. I do love my stroller rides. We got a baby group picture: That's me there on the right, Caroline (she's still cooking, so she's coming soon) in the middle, and that's my girl Gabriella on the right. 

Gabriella had this sweet bunny rattle she was carrying everywhere. You will never guess what she did! She gave me a lil smooch with the bunny rattle! I knew the ladies loved me:) I bet it's my cheeks. Now, this is where I start to get fussy. I'm not quite sure what's gotten into me, but I just want to cry all the time. Maybe I'm tired. Maybe I had too much excitement. Or maybe it's because I've got some situation going on in my mouth that's causing me pain and extreme slobber. Lee Lee keeps saying I'm a basketball player because I keep dribbling. I made Lee Lee's blogging boot camp session a wee bit difficult for her. But she managed. Here's a pic that captures the moment.

I don't feel too bad since my girl kept her mama busy while she was working, too. Only she was more happy about things. Yeah, that's me crying in the back with Aunt Lee Lee putting on a brave face. I managed to crash for a few minutes. Check out my awesome pillow fort the girls made for me.

We exhausted our bottle supply. I fell asleep on the long way back and let Uncle C give me a bath and bottle. I was being difficult when he tried to put me to sleep. It took Aunt Lee Lee cuddles and her singing me Bible songs to finally get me to sleep. Let's see what tomorrow brings.....
