What's Up Wednesday: July 2015 Edition

I look forward to the last Wednesday of the month so I can do this post. Or if you're like my over zealous blogger friend who shall remain nameless (ahem....Leigh Anne), you could write yours 2 weeks early (insert wink face emoji here).

What we're eating this week:
I'm actually embarrassed to answer this questions because there is nothing of importance to mention. It's so hot out that we don't want to cook. Also, it's VBS week at our church, so we're busy every night. We've been eating left overs, snacks, and going out.

What I'm reminiscing about:
July 17 we celebrated our 5th wedding anniversary. I've been thinking about our past anniversaries and how we've spent them. I've only been blogging for a couple of years, so I don't have them all documented. Here are some posts on the past 3 anniversaries I do have documented:


What I'm loving:
Summer break in general. I love that I can sleep in until 9 or 10:00 and just pick what I want to do for the day. I can go to Target on a whim, binge watch Netflix, blog, read, hang out with friends, or just anything. I'm not loving the hot temps though.

What we've been up to:
This has been a busy summer. We just got back from Mexico a couple of weeks ago. We've had a full schedule (or at least I have) since we got back. I've been hanging out with friends, making kolaches, shopping, and this week is VBS week. It's actually my last week with absolutely no work/school related things involved.

What I'm dreading: 
August and September. While I welcome the end of summer temps (although not so much here in Texas) and the start of football season, this is my least favorite time of year work wise. It's so hard to go back after all these weeks off having fun and relaxing with no demanding schedules. Now it's back to school prep, professional development, and teaching routines and procedures to 18-22 incoming first graders. I'm not at ease until October....that's when I'm finally in my school groove.

What I'm working on:
It's not so much what I'm working on now as what I'll be working on starting next week. I'll be working on getting my classroom set up with red/black and Texas Tech decor (thanks in large part to all my mom's help), back to school information for parents, students, and my team, and lesson planning. Let's not also forget the large amounts of copying and laminating that will need to be done!

What I'm excited about:
OK, so I'm about to show my nerd here, but.....I'm super excited for my Erin Condren teacher planner to arrive!!!! Click on the link above to see the one I chose. I saw a friend on Facebook post about how she was excited to receive hers. I didn't know that Erin Condren made teacher planners. I knew of her life planners but.....imagine my excitement when I went to the website and checked them out! It is a "square" teacher's dream. I watched a couple of YouTube videos of people who walked you through how they used their planners. I was hooked and I totally ordered mine! What I'm watching/reading:
Sadly, I haven't been reading much. When I do read, I'm reading a few chapters in "Sacred Marriage" by Gary Thomas. I'm still doing my daily Bible reading on my Bible app. I also do daily devotionals on www.shereadstruth.com. I just started a new devotional app called First 5 where you commit your first 5 minutes of your day to God and His Word. You can set your alarm to it. I've really enjoyed it so far. As for what I'm watching, well I just finished The Bachelorette. I've enjoyed commenting with my friends this season on the craziness of the show. Bachelor in Paradise starts next. I can only imagine......
I'm also binge watching Gilmore Girls. I'm LOVING this show. I was told that I needed to watch it, so I finally got on board.

What I'm listening to:
I recently added some songs to my "Car Jams" playlist.....mostly Meghan Trainor and Miranda Lambert. I'm also going to try some podcasts when school starts since I have a long commute.

What I'm wearing:
Absolutely nothing exciting. I circulate the same 3-4 outfits throughout the week. This usually consits of capri sweat pants or shorts and a T-shirt. Of course, I also have my maxi dresses for special occasions. This fall I fully intend on embracing (since I've already been buying them) the Palazzo pant trend.....#elasticwaistbandsforthewin

What I'm doing this weekend:
Mr. B is off on Saturday, so I thought we would attempt at painting and redecorating the guest bathroom. This has been on our "To-Do" list all summer. We've just been too lazy to actually get it done. I'm the queen of excuses when it comes to house repairs. #theresalwayssomethingbettertodo

What I'm looking forward to next month:
Since next week is technically next month, I am looking forward for my mom, dad, and baby nephew to come for a visit. My mom and nephew are coming Tuesday night. She's coming to help decorate my classroom. She does this every year. Bless her! My other sister is a first year teacher this year, so my  mom is helping her this week get her room ready. #superteachermom
I told my sister that I kind of felt sorry for my mom having two daughters that were teachers. That's double the set-up work. Not to mention the fact that the baby nephew is sure to be a cute, chubby distraction from the task at hand. Mom, you truly are a superstar this time of year. She always comes through even though I live over 300 miles away. She always makes the trip to come help. She's even doing behind the scenes work at her house now and sending me text updates on her progress. She's going to help me get my files in order. I really couldn't do it without her each year.

What else is new:
Nothing really new to report. I'm now planning our next lil' getaway: NOLA for a 4-day weekend over Christmas break to celebrate us both turning 30!!!! I've been researching deals. I've also been stalking the Kate Spade sale sight for my birthday/Christmas present.....

What I will miss most about summer:
Refer to what I wrote about in the section "What I'm loving".....I'm going to miss all of that when school starts. I'm not looking forward to waking up at 6:00am (because I told myself that I have to start my morning with a 30 minute workout) and then making that 40-50 minute commute to/from work everyday. I'll miss only having to put gas in my car 1-2 times a month. I'll miss eating lunch whenever I feel like it. I'll miss visiting friends (though a few of them will be working down the hall from me) and random shopping trips to Target (which is probably a good thing).

2 Things You Love, 1 Thing You Treasure, and 1 Thing You'll Never Forget

My idea for this post came from one of my favorite bloggers www.modermrsdarcy.com. Today's post was inspired by one of her commenters on an old post she did called "Practicing self care on a daily basis."  The comment read:

This made me think about what I love, treasure, and find unforgettable. Do I try to live by that practice. Do I exercise self care on a daily basis. So, I thought I'd come up with my own lists to try to help me out.

Another Weekly Recap

I'm running low on vacation time as the end of July quickly approaches. You would think after a week on vacation, I'd come home and spend a week at home trying to regroup. Nope! I've managed to stay busy this week. Here's a bit about what's been going on this week:

Monday
Mr. B went to work and left me at home to tackle all the laundry that accumulated from our trip. I got a phone all from a former coworker, who moved to Japan to teach, asking if I was free to grab lunch. No, I didn't have to go to Japan....she was here in town. We met up in Arlington at the Boomer Jacks. I was so tempted to get a big burger and fries. However, I really hadn't consumed many veggies while on vacation so I felt I needed some nutrition. We both opted for the bottomless soup and salad option. It was nice to hear of her experiences in Japan and to catch her up on all the goings on at school. From Arlington, I headed straight to McKinney to visit another former coworker. She and I visited a few hours before our other friend showed up (another coworker). We made plans to get together to watch the "Men Tell All" episode of "The Bachelorette." She made us Tacos and a very delicious cake. We've been text commentating throughout the whole season. It was fun to have live commentary for this episode. It did take us a while to watch the 2 hour episode since we were constantly pausing it to make our commentary. The best part, my friend's husband was sitting with us and watching and commenting, too. It's awesome hearing a man's perspective on things. I also found it funny he was able to give me a ton of background info.
*Side note: I remember when my mother-in-law was really wanting me to work at an actual school where I had teachers down the hall I could talk to and form friendships with. She said that's what she wanted for me as a teacher. My fist 3 years I was in a unique, but still very enjoyable, teaching situation. I'm so glad that I have formed relationships with the women I work with that will last even if/when we no longer work together.* (I would also like to say that we were missing one of our "thread" members this night....you know who you are)

Tuesday
I spent a bit of my morning hanging out with my nephew who's in town from Austin this week. I took him to the library for story time and to check out some books. He wanted me to read a couple of the books to him while at the library. He's going into first grade this year, so I'm excited to watch him learn to read and write. He and I always have so much fun together.
When I got back home, I ate some lunch and took a short nap. I had a few hours to go before Mr. B got home, so I finished up the laundry and watched a few episodes of "Gilmore Girls." (yeah, I just started the series today, so I'm bout to go on another Netflix binger). When Mr. B got home and showered, we headed over to our preacher's house so his wife could teach me to make authentic Czech kolaches. You can read all about that experience here. Also, you can check out the recipe for kolaches on my "What's Cookin?" page. We stayed and visited for while and ate some of the kolaches for dinner. #becausewecan
Besides, it apparently was "National Junk Food Day."

Wednesday
Since we've been so busy and this was Mr. B's day off, we decided to keep it low key and chill today. We slept in until about 10:30. Mr. B's dad came over to help him put the new burners on his grill so we could start using it. We had kolaches and coffee for brunch before hanging out on the couch watching TV. We had a lot of Jimmy Fallon to catch up on since we were out of town last week. I was so lazy that I even dozed off on the couch for a few minutes. Around 2:00 we decided to get out of the house for a bit. We went to Target....this time I had supervision. We only bought a few necessities. We went to grab some ice cream at Marble Slab after our Target trip. It's over 100 degrees here.....we needed ice cream.
I got the salted caramel cake with peanut butter cups and heath bar mixed in. He got sweet cream with cookie dough, pecans, and caramel topping. 
We headed home and he opted for some video game time while I played one of my computer games. We fired up the grill for some brats. I had sweet potato fries with mine. After dinner, we went to church services before coming home and watching a few more shows on our DVR. Overall, it was a nice, relaxing day at home. One we both needed. 

Thursday
Mr. B had to work the late shift today, so we slept in a little bit. He woke up before me to take care of some yard work before it got too hot. We cleaned up the house since I was having guests over on Friday. Mr. B was so awesome because he got down on his hands and knees and scrubbed our floor. We ate a quick lunch before he had to head to work. I went to the grocery store to grab stuff for my lil party and our food for next week. I came home and unloaded groceries before settling down for some more Netflix binge watching....Gilmore Girls. When Mr. B got home, we watched a bit of TV before calling it a night.

Friday
Mr. B had to work that morning, so I slept in until about 9. I knew I needed to get up and start preparing food for my party. I had a couple of errands to run before everyone showed up. I had my team over for food and girl talk. Check out our spread!

Most of my menu I found on Pinterest. I'll link up to the recipes. I had: 
  • fresh veggies with ranch Greek yogurt dip (2% Fage greek yogurt-17.5oz and 1 pack of ranch Greek yogurt dip mix)
  •  cheese cubes
  •  tortilla rollups (you can mix and match these tons of ways)
  •  guacamole chips that I bought at Aldi
  •  my guacamole recipe (recipe on my food page)
  •  caprese salad (fresh mozzarella and grape tomatoes with greek dressing and Mrs. Dash garlic herb seasoning)
  •  and assortment of crackers and bagel chips from Aldi
  •  apples with caramel apple dip (I used heath bars instead of snickers)
  •  meatballs (grape jelly, BBQ sauce, and Kroger homestyle meatballs)
  •  cheesy chicken ranch dip (I used 2 pkgs of ranch dip mix on accident and it turned out great....and I used a crockpot since it's too hot for ovens)
I had a lot left over, so Mr. B and I will have food for a while to munch on. I love visiting with these ladies. Even though 1 has retired and 1 is leaving to be a first time mommy (insert squealing excited face here) and one is moving to 2nd grade, we still plan on keeping in touch via text. #thankgoodnessfor21stcenturyliving 
None of us can believe that it's almost time to start another school year in a few weeks. #summerstaylonger

When everyone left, Mr. B and I just hung out and watched some TV and enjoyed left over snacks.

Saturday
While Mr. B was at work, I went up to the church building to help decorate our classroom for VBS this upcoming week. I spent 3 hours just visiting and hanging things on walls. I headed back home and watched an episode of Gilmore Girls while eating some leftover snack food from the day before. I thought I might want a nap, but then I started getting an influx of ideas for my classroom while I was trying to concentrate on sleeping. So, I called my mom to share and see what she could get done on her end. I still want a nap, but I know that I'm leaving at 4 to head to our friends' house for a pool party. Last night's sleep was interrupted by an idea for a a new post to my Forever Faithful page. I got a sweet thank you note from my now retired coworker. In this note, she wrote about each one of us on the team and what she liked about each one of us. I love how she shared each of our unique quirks and personalities from her perspective. I thought of a way to incorporate what she wrote about me into a post for my page. Click here to check it out.
So 4:00 came and it was time to head to Plano for another pizza/pool party with the gang. I was pleasantly surprised at how quick the drive went this time. We made it there in about 35 minutes! We spent some time lounging, splashing, and tossing each other around in the pool before getting out and munching on chips/dip and veggies. We went back in and the boys went to get the pizzas. After pizza, we sat around just talking and decided to play a round of Guesstures boys vs. girls (the boys won this time....boo!). Us girls decided we wanted coffee and time away from the boys (all they wanted to do was sit and play on their phones). We headed to Starbucks for coffee and girl talk. Since it was near closing, we were offered free cake pops by the barrista.

I had to give De'Von a hard time because he promised the selfie stick next time we all got together. Well, he forgot it (but he'll blame it on Christy since he was working and she was at home). Since we had no selfie stick, this was the only pic that managed to get taken that night:

We headed home around 10:30, took a shower, then went right to bed.

Sunday
Mr. B had to work that morning while I went to church. I spent my afternoon writing, reading some blogs,  making my famous potatoes, sleeping, and watching Gilmore Girls. Vacation Bible School started today. Mr. B and I went to church Sunday afternoon. After church, we headed to game night at a friend/coworker's house to eat and play games. Homemade chicken strips (that were totally bomb, BW) and my potatoes were on the menu. If you wanted veggies, you had to have the pico or avocado slices. #whoneedsveggies
We played several card games. It's pretty safe to say that BW and I have a competitive streak. Mr. B and V are just trying to stay in the positive point range.....when it comes to Nertz, that is. I won't say who won that game (I totally did!) because that would be bragging.......
I did, however, finally let BW win at least one other game we played that night. After all, I was at his house and I try to be a good guest. Since it was the first time at their place, I finally got to meet the famous Leroy the Cat. He even was kind enough to take a pic with the whole group at the end of the evening.
I know another game night will happen again because BW is waiting to finally beat me at Nertz:)

Yeah, so that was my busy week! While I still have 3 "official" weeks before I go back to work, I know that this upcoming week is really my last week with absolutely no school work. I need to read (I've been such a book slacker this summer), shop (not really, but really), and watch more Gilmore Girls. I refuse to look at that pile of school stuff sitting in the corner in my house.

Making Kolaches

Our preacher is married to a wonderful woman who also happens to be from the Czech Republic. She makes great, authentic Czech kolaches with cream cheese and fruit filling. She brings them to group gatherings from time to time. I remember the first time I finally got to try one of "Ivana's famous kolaches." Yeah, they're that delicious. One day, I jokingly told the preacher that he shouldn't be allowed at our 4th of July cookout/game night unless he showed up with kolaches (now at the time his wife was visiting her family in the Czech republic, so she was not available to make them). He informed me that he would not be making them, but that if I wanted them so badly that I should ask his wife to hold a kolache baking class so I could learn to make them. So, I did. Now, I was the only student.....but that just means I got some good one-on-one instruction. Here's a little bit about my experience.....(if you want the recipe, check out my "What's cookin?" page)

We arrived at 5:00 and she had everything out on the counter ready to go (I totally forgot to take pics from the very beginning....#bloggerfail). She handed me a pen and paper so I could write out the recipe and take notes. She told me it would do me no good to copy her recipe since it was all in Czech. I wrote down the ingredients needed for the dough. She then showed me the process for making the dough. She used her bread maker, but she said it could be made using my Kitchenaid Mixer. She gave me all the tips when dealing with yeast and rising dough. For example, yeast reacts to warm liquids, but you don't want the yeast to come into direct contact with the liquid. I love getting "tricks of the trade." I have a bread maker, but it's old and I'm pretty sure I have no idea how to use it. It takes about an hour to an hour and half for the dough to rise. While we waited, we sat in the living room for a little chat over grapes and cheese cubes! Me, being the nosy curious person I am, was asking all kinds of questions pertaining to being from another country. I'm fascinated by other cultures. She was very nice and answered/explained everything I wanted to know.

When the dough was ready, it was time to roll it out into a long log
After you roll it into this log shape, you cut it into pieces. Each batch makes about 20 pieces. Then, roll each piece into a ball and flatten it out.
After we flatten out each ball of dough, we stuffed it with our cream cheese mixture (this is optional; you don't have to have a double filling....but I love cream cheese so.......) When you put in your cream cheese mixture, you form the dough into a "pocket" and then flatten it out before placing it on the pan. You want to make sure your cream cheese is fully sealed in the dough so it doesn't ooze out when baking. 
Once you get them on the pan, use your finger to make a "dimple" in the middle of the dough then brush each kolache with the left over egg whites from your eggs (mentioned in the recipe). This helps get the kolaches a nice shade of brown. Then, you top it with your choice of fruit, preserve, or "butter". This part is really up to you. We made 3 flavors: apple butter, plum butter, fresh apricots.


The plum butter we used is made from Serbian plums. They bought this particular jar at a store here in town called "Apollo the Greek." I personally have not checked this store out yet. However, I plan on checking it out to purchase this product since it was my favorite.
Here we are putting it into the over to bake. It only takes about 10 minutes to bake. 
And here they are fresh from the over. The dusting on top is an equal mixture of powdered sugar and flour with a bit of melted butter. This is also optional.

I've never had these fresh from the oven....WOW! They are amazing! Since today was "National Junk Food Day," I think it was totally appropriate that these were our dinner, with a cup of coffee. Of course, I didn't find out about junk food day until AFTER I had these for dinner, but......

We had a nice visit. We ended up staying for about 4 1/2 hours eating and talking. I may or may not have had one of each flavor....we won't even get into the amount that Mr. B consumed........

Some other things I learned:
  • A kolache under no circumstance should ever have meat of any kind in it. If it does, I'm not to mention it to them. An authentic Czech kolache does NOT have meat in it. "No self-respecting Czech ever puts meat in a kolache."
  • When counting in Czech, be careful when saying the number 4.....it can come out as a naughty word in English (yeah, it happened)
  • When counting in Czech, the number 16 sounds an awful lot like the word "chestnuts."
  • Finally, I really shouldn't count in Czech.....it doesn't work for me!


5 Years of Wedded Bliss

I know I'm a few days late, and I totally forgot that I wanted to do this post, but here it is anyway. About a month ago, my friend Leigh Anne celebrated her 5th anniversary and did this cool post about their Top 5 things. I told her I wanted to steal it when it was our anniversary. Side note: I also found out yesterday that she and I got engaged just a few weeks apart AND got married just a few weeks apart, too. We won't spend too much time mentioning the fact that her and her hubby are a few years younger than Mr. B and I........

So anyway, here it is.....

Mr. B and I have been together for over 6 years, but married only 5. We've had our ups and downs just like any couple, but I can honestly say that we've had a happy marriage. I just love this man so much and am constantly amazed at how happy I am with him on a daily basis just doing life. For this post I'm going to share my top 5 things about him in a few select categories then ask him to do the same. First, how about our favorite wedding picture:

Top 5 Memories

His:
  • Interacting with dolphins on our honeymoon in the Bahamas
  • Walking around Sundance Square at Christmas time
  • Our first kiss by the pool at her old apartments with the stars overhead
  • On the 4th of July when I told her I was in love with her for the first time
  • The day we got married

Hers:
  • Our first date to Sundance Square going around town and losing our car in the parking garage. To this day, we always park in the exact same spot to ensure that it never happens again.
  • Studying the Bible together and him being baptized into the church
  • July 4, 2009....him standing up in his game room with fireworks going off as he told me he loved me for the first time
  • Buying our first home 
  • His proposal: dinner at PF Changs, horse and carriage ride around Sundance Square, proposal in front of the Christmas display with a photographer

Celebrating 5 Years of Marriage in Mexico!!!

The time finally arrived (and all too quickly ended) for our annual big vacation. We like to do something fun the week of our anniversary. Last year, it was the Dominican Republic (you can read recap 1, 2, and 3 here) and this year it was Mexico. We stayed at the Hard Rock Hotel Riviera Maya. It's about an hour and half from the Cancun airport. Let me just start off by saying that we totally felt we got our money's worth on this vacation. This is an all-inclusive resort with excellent service in every area. They really do treat you like rock stars. We got an upgraded room and included airfare and transportation and were able to book all that through the hotel website. Our stay also came with $750 in resort credit to be used on tours, upgraded food/wine lists, and/or at the spa. The only catch with that is that you have to pay a 20% service fee on service-based things (ie. the spa). Get ready, there are about 69 pics for this post.....

Let's start off with a tour of the hotel:
We stayed in the "Heaven" area since it was adults only. This is our lobby area. There were also shops and restaurants throughout the lobby as well as the spa.
Everything about this place is music-themed. The staff have name tags that look like guitar picks. They don't have signs that say "restroom" or even signs that say "men" or "women". This is how they show restrooms:

Now, I'm the idiot that had no clue what was going on. So, I go to the room on the right. Well, I walk in and see urinals on the wall. Wait, when did ladies rooms get urinals? Yeah, totally walked into the men's room....again! I did this on our Fredericksburg trip, too. I quickly walked out and then the light bulb went on and I realized how this thing worked. Female rock stars meant women's restrooms. Yes, ladies and gentlemen, I have 2 college degrees!
Next, we have some decor. Now, I didn't take a million pics of the decor. Throughout the hotel they had clothing, guitars, and other accessories of famous musicians in showcases. I did, however, take some pics of the lamps around the hotel. The lamp stands were made out of musical instruments.



Now, for our room. We got a king-sized bed with a partial ocean view room. I thought the bed was comfortable (although the pillows were way too soft for me since I prefer a firm pillow) and the room was spacious.
Yes, that's a nice big bathtub made for 2....with jets! It was right there in the main part of our room. We could watch TV (well, what little English channels they had) as we sat in that tub.

The bathroom part was a separate hallway. It had a double sink, enclosed huge shower, enclosed toilet, and lots of shelf space.

Now, here's a little bit about how our week went!
Tuesday:
I follow a blogger (The Organized Junkie) and she had posted a travel checklist that was very detailed and very much up my "square" alley. You can get a printable copy here if you're interested.
This was huge help when packing!
We had a 7am direct flight to Cancun. We were up at 3:45am and grabbed a quick breakfast and headed to Mr. B's parents' house so his dad could drive us to the airport. Of course, we had to take an airplane selfie.....
It was about a 2 1/2 hour flight to Cancun. Then, we had about 1 1/2 hour drive to the hotel.
By the time we got to the hotel, it was about 11:45. Our room wasn't ready yet, so we went to the "Torro" restaurant out by the pool for a buffet lunch. After lunch, we met with our concierge person and she helped get us registered at the spa and meet with our transportation representative. She also offered us a breakfast the next morning with a $200 voucher if we took a tour of the VIP area. I knew exactly what this was. We did it last year. They try to sell you membership to their hotel (kind of like a time share...although they swear up and down that it's not like that at all). Hey, I'll spend a couple of hours listening to you try to sell me something for a nice meal and free money. By now, it's almost 3:00. Our room was ready and the bellhop took us to our room. We got settled in and headed straight for the pool. They always have a DJ and activities at the pool from about 9-5. They also have a snack bar with chicken fingers, fries, burgers, hot dogs, chips, guacamole, cheese, wings, etc. You just go grab food and drinks whenever you want! They also have servers walking around the pool area serving food and drinks. I didn't really got any good pool side pics, but I did get a pic of the area around the pool:

After we had our fill of swimming, we headed back to the room to shower and change for dinner. We decided on Italian food for dinner. We went to "Ciao" for dinner. The service was great....a little too attentive actually. 
I totally forgot food pics, but trust me, it was amazing. When they asked if we were celebrating anything, we told them it was our anniversary this week. So, they made this for us:
Yeah, the spelling on some things is not always on point. I can't tell you how many times my last name was spelled "browney" this week.

We wanted to catch the circus show at 8:30, so I needed a little pick me up. Expresso after Tirimisu....yes, please!
They had nightly entertainment. We went to their circus show that evening. It did not disappoint.


We decided to go back to the room and relax in that big tub and watch some TV. We found a channel in English that had a show we liked.

Wednesday
We slept in until about 9:30. We were meeting our concierge lady at 10:30 to go to the presentation and breakfast we agreed to. The rep that was presenting to us was American. We spent about 2 hours talking and listening to several people try to sell us membership...again. We turned it down....again. We did tell them that it was this presentation last year that made us want to come stay at the Hard Rock. They told us about a new location opening in Los Cabos in a couple of years. Yeah, so going to do that! When we got back, we spent the next few hours at the pool. We ate lunch from the snack area and even found some people to chat with. We enjoyed the entertainment before heading back to our room around 5:30. We decided to try the Asian restaurant this time.
The restaurant was called "Zen." This was probably my favorite place we ate the whole trip.

The appetizer was a spring roll with some sushi. We liked it so much, we got another order of sushi and spring rolls.
This was my main course: fried rice with shrimp. Mr. B had noodles and shrimp.

Let's not forget the dessert! Tempura fried ice cream with caramel sauce. It was so good. I'm still mystified at how they make this happen without melting the ice cream.

They only had chopsticks at the table. It totally worked for me with the appetizer. However, about half way through the main course, I was getting a hand cramp and getting impatient eating rice with these stupid things. I asked (in Spanish even) for a spoon. "yo necesito una cuchara por favor." Yeah, be impressed....

After dinner, Mr. B wanted to check out the Led Zeppelin cover band at the night club. I indulged him. I mean, after all, this is his vacation too:)

After the band, we went back to the room to watch a movie. Since Asian food doesn't last long in your belly, we ordered room service for a late night snack of fruit and quesadillas. 24/7 room service is included in your stay! We took advantage of it several times. 

Thursday
We ordered room service for breakfast for 10:00am.
Yeah, we ate it all!
We spent our $200 voucher for a bali bed on the beach with a private server. It came with an appetizer, a bottle of wine, and service from 9-5. Our server would bring us food and drinks all day when we asked.
So this was our setup that day.
And this was our view. The beach is different here. It's a very rocky area of beach on this resort. You can't go beyond the rocks. It's more of a cove to swim in. This suits me better since I'm not a huge fan of open water. This gave me the ocean vibe without all the open water. However, there was still fish lurking in these waters. They actually came up really close. Many times I jumped up on Mr. B asking for his protection from the fishies. I know, they won't hurt me. But there were reports of a barracuda lurking about. I'm totally a pool kind of girl.

We hung out at the beach from about 11-4:30. My legs got burned pretty bad....but now, they're totally tanned:)
We wanted to soak in the pool for a few minutes to get the sticky salt water feel off us. Then it was time for a shower and dinner. We chose Mexican food for this night.

Since we were too full for dessert at the restaurant, we ordered room service and got oreo cheesecake instead.

We took a quick night time balcony selfie before crashing for the night. Mr. B wanted to check out the Jimmy Hindrix cover band, but we just couldn't handle it. All day in the sun will take a lot out of you. Relaxing on the beach is very tiring:)


 Friday
Yay! It's our anniversary day. I love celebrating our wedding anniversary. We are forever being told that we still act like newlyweds. That's OK. I think that's a good thing. Since the hotel knew we were celebrating our anniversary, we got a special breakfast delivered to us.
Salmon scrambled eggs, coffee, mimosas, toast, hash browns, yogurt parfaits. Yeah, it was good. After breakfast, we spent the afternoon at the pool.

This was the only rainy day of our trip. Around 2:30, a thunderstorm came rolling in.
We were told to exit the pool so we didn't get wet! LOL. But seriously, we had to get out since there was lightening. We went and stayed in the lobby since we had a spa appointment at 4. We used our resort credits on an Agave spa ritual for 2. We started out with an hour of hydrotherapy. Mr. B and I went in separate sides of the spa....men on one side, women on the other. First, I went in the sauna, then cold room, then steam room, hot tub time. They provide you with a robe and slippers, fruit and nuts, and water. After our hydro session, we were brought back together for our Agave ritual. We started with a 30 minute hot tub experience on the roof top. It was still raining, so it was nice to relax in the hot tub and watch the thunderstorm roll in over the ocean. Our session started with a full body exfoliation and mud wrap while getting a facial. Then we showered off the mud and got our massage. Now, the experience was amazing and relaxing. However, I'd hardly call what we got a massage and facial. It was more just rubbing lotion on me. I've gotten a way better massage and facial at Massage Envy.
After our spa experience, we headed back to get ready for dinner.

 We had reservations at the Brazilian Steak House. 
Ipanema: It had the feel of Texas de Brazil. However, I much prefer the food at Texas de Brazil. The food here was alright, but I wasn't that impressed. The salad bar and hot sides buffet was lacking, and the meat was just OK. 
This was the dessert they served us. Yep, happy honeymoon! The dessert was bomb though!


We asked another couple to take a quick pic of us! The guy told us that they actually invested in a selfie stick for this vacation. He thought he'd never own one of those, but he got a lot of really good pics with it. Oddly enough, we saw a ton of people with selfie sticks on this trip.

We caught a show after dinner. It was a Michael Jackson show. They had a great impersonator. I managed to get a few good shots. It was actually a really good show.

Next, we headed to the night club to check out the band. This night club has a swimming pool and whirlpools on the floor. So you can jam on the floor or in water!

Saturday

Mr. B really wanted a pic with the Hard Rock sign in front of the hotel. Our bellboy was nice enough to stop and take the pic for us on our way to the lobby. I believe this will be the pic that goes in our picture frame that I bought! I collect picture frames from our vacation spots. 

Our flight left at 4, so we were at the airport a little before 2. By the time we got home, it was after 9:00pm. We unpacked, got a few groceries, showered, and were in bed before midnight. We got up the next morning and went to Weatherford for the day to spend time with Mr. B's family celebrating his grandma's 91st birthday. It's been a crazy and eventful week. We didn't finally get to sit and relax on Sunday until 9:30 that evening. I've already got another full week ahead......

Something I learned in Mexico (besides "don't drink the water") "When we're in Mexico, we're all Mexican!" It's been a great 5 years of wedded bliss to Mr. B! You know I'm already thinking about next year's adventure.....
